The Nikon D40 is the flagship camera for DSLR starters. It's a fantastic camera, albeit limited in some areas it still does a perfect job if you learn how to use it.

As mentioned above, the lens kit would be great for your photo class.

If you want a bit more current, the D60 might be up your alley. Thought this one seems to be falling off the Nikon radar. Not a very popular camera, folks are still buying the D40 above the D60 or moving onto the D90.

The Canon XSI is a fantastic starter, but it's about 50 bucks to a hun out your budget.

Great low light performance, something to behold. Some of the kits come with a 50mm/1.8 lens, one of the cheapest pieces of glass on the market, also one of the best bangs for your buck. Canon did great with this lens. Highly recommended, about 80-100 bucks as a stand alone.

There are a couple cameras in your price range. As you said the Nikon D40. For about $20 more there is the Canon Rebel XS. I believe the entry level Sony and Pentax are also in this price range. Personally I would stick with either Canon or Nikon. There are simply more options as far as lenses and the like than any of the others.

As far as which lens to get. The 18-55mm lens that comes with either camera is a good lens to start with. The focal length is great for general shooting. It goes from moderate wide angle to slight telephoto. As you gain experience you can decide what other lenses you may want.

Lastly yes the D40 or the Canon Rebel XS are Perfect for a photo class.
