Is there a specific company that's best at this? What kind of lens is best to start with?

I'm delighted with my Canon Rebel XT-- my choice after reading reviews, going to stores to hold the cameras, using friends' cameras, etc.

The 18-55mm kit lens isn't so bad, and it's definitely inexpensive. You can probably find a Rebel XT with this lens for less than $100 more than the camera body alone. Eventually, you'll want a better lens, but this lens can keep your starting price (including a 1GB CF card) below $1000.

Either a Canon Rebel XT or a Nikon D50. I would recommend the Canon because it has a higher resolution at 8mp vs 6mp. For reviews, visit http://www.dpreview.com/. For the Canon, get the Canon EF-S 17-85mm f/4-5.6 Image Stabilized USM SLR Lens. This is equal to 27-136mm in 35mm film format. It's sufficient for most photo-taking situations. Canon also offers a very cheap EFS 18-55mm lens but I feel it's a little bit short in the zoom range.
