You will already noticed the cries of Canon and Nikon from the diehard fanboys. Truth is they are equally as good. Sony and Pentax are also worth considering. All of them make good DSLRs and supporting systems. Pentax is the weakest from the point of view of number of lenses available, but my guess is most of the £1000+ lenses are going to be out of your budget for a long time anyway, so it's probably not an issue.
If you are interested in Sony or Pentax just go for the bottom of the range camera with image stabilisation. Be careful though, there are one or two cheapo models without it.
For Nikon or Canon the bottom of the line DSLR will be fine. Nikon and Canon do image stabilisation in the lens rather than the camera body, so you can't pick a wrong body. Personally I would say not the Nikon D3000 though. That's previous generation. The D3100 is a lot better for not much more money.
Go and see what you like the look of. What the weight and feel of the camera is like in your hands. Basically any DSLR will have a much bigger sensor than your bridge camera so you will get better pictures just because of that.
For the record, I'm a Nikon user and would heartily second the vote for a D3100, but a cheap Canon or Sony will do just as well!

The D3100 is £362.60 at amazon.co.uk
You will of course be sinking additional money into an SDHC card, card reader, carrying case, and spare battery. Later you will be saving for a good tripod.
The D3200 adds a few nice features and it adds an extra 10 MP of empty magnification. It's not worth straining your budget.

Second hand Canon 5D mkI/Classic and 50mm f1.8 II.
Sounds a bit silly to get a second hand SLR, but the 5D is quite the tank of a camera, so they're usually pretty good. 50/1.8 will let you do everything you want.

'Rebel,' is the US name for lower-end Canon EOS - you won't find one in the UK.
Argos are doing the Nikon D3000 for a lot less right now - check it out, it's discontinued but it'll be decades before Nikon run out of spares.

I'd go for the Canon EOS1100d (or Rebel t3), very good camera, good price!
