I will be in Tuscany for 2 weeks. Will I have enough pictures or should I get a more MB disk?

It depends on your camera. You should always take the highest resolution for each picture. If your camera is new then most likely it will take 12 mega pixels per picture (about 3 MBs for JPEG format) and that gives you about 85 photos for your camera’s internal memory. If your camera is old like mine then you will get about 6.1 mega pixels per picture (about 2.36 MBs for JPEG format) and that gives you about 108 photos for your camera’s internal memory. Check your camera’s manual.

It depends on the resolution of the image you take - most cameras allow you to opt for 640x480 which is fine for uploads to the www - if the camera is high res then you may only be able to store a few pics - so a memory card will allow you to save more ie 4GB P&P :-)

Based on settings of your camera, you will take hundreds of pictures in standard JPEG format.
But 256 MB is very low, so you expand this by adding additional memory cards with 2GB or higher.

Too low, unless you shoot at the lowest resolution and quality setting (which isnt recommended unless your just a very casual user).
Memory cards are dirt cheap nowadays, you can easily get 4 GB cards for $20 or so. I recommend getting one as well.
