Neither is best for all photographers. That's why there are plenty of pros using Pentax, Sony, Panasonic, and Leica.

What's better Ford or Ferrari. Ferrari of course, right? Well, I'm a pig farmer so how in the world am I going to use a $250,000 Ferrari on my muddy farm? the $250,000 Ferrari is a useless brick, and I'd be better off with an $800 used Ford F-150. While this is a rather silly and extreme example, this still holds true for camera gear. Cameras are just tools. Based on your needs and budget, one will better for you while not so great for someone else.

Today's DSLRs are vastly better than the professional gear used in the film days. There is truly no such thing as a bad DSLR, just one that is better for your needs.

To take your question a step further, why just Canon or Nikon. Do you know that in the non-pro world, Canon and Nikons get outperformed by Pentax and Sony? It's only in the professional market that Canon and Nikon stand alone, but even at that, professionals are starting to migrate away from the big and heavy DSLRs to Sony's mirrorless Alpha series of cameras.

Again, there's no one best brand otherwise all pros who use their gear to pay the mortgage and put feed their families would all be using one model from one brand. To show you that it's the photographer and not the gear, here's an amazing photographer using Pentax: http://www.billgekas.com/

Nothing to choose between them on performance terms. Add Pentax to the mix as well.

The best one is the one that you like the best. There are little things that will sway it one way or the other.

1. All current Pentax and Canon lenses autofocus with all bodies. No worry about "will this lens autofocus with my camera?" that you get with Nikon

2. The image stabilisation is in the lens with Nikon and Canon so the viewfinder is stabilised unlike Pentax that have it in the body - but the advantage for Pentax is that it works for all lenses unlike Canon and Nikon where you must buy IS/VR/OS/VC lenses.

3. There are plenty od 3rd party lenses available from Sigma, Tamron and Tokina - because Pentax are the smaller of the 3, many lenses are not available in Pentax mount.

4. If you have old lenses that you want to carry on using... With Nikons you can use lenses dating back to the 1950's (manual focus and exposure though!). You can use any Pentax K bayonet mount on Pentax DSLRs but not the older "Pentax" screw mount. Canon annoyed the world in the early 1980's by changing their mount meaning you can only use lenses made after then ie EF mount NOT FL or FD.

I recently bought a used Nikon. Primarily because if I upgrade in the future, my lenses will fit a new camera body. Nikon are one of the cheaper of the well known brands, though the clincher for me is that most 50 year old Nikon lenses are still compatible with the latest models to some degree.

Nikon is better because nikon uses sony sensors which have superior dynamic range and iso performance in comparison to canon.

It's like comparing bunch of different fruits. I have been using Canon cameras for long time and pretty happy with every model I had. Canon cameras have lots of Lenses available and lots of low cost but quality accessories.

I'd take Pentax over either, because I can't afford a Hasselblad.

Anyone asking this question shouldn't be allowed within 50 feet of a DSLR.

Congratulations on spelling "Canon" correctly. Otherwise, anyone who only knows 2 brands is nowhere near ready to make a purchase.
